For the dressing, cut one mango in half and puree the first half. Put a few teaspoons of the puree with a teaspoon of mustard, pepper and salt in a salad bowl and mix.
Cut approx. 2 handfuls of green salad and cut a zucchini into coarse strips with a slicer. Cut 1/2 cucumber into quarters lengthwise and cut into pieces. Then fill the bowl with the dressing with salad, cucumber and courgettes. Dice the second half of the mango, scoop the pulp with a tablespoon and pour over the remaining salad.
Dice a vegetable cheese alternative in one piece and sprinkle a handful of it over the salad with a pinch of pomegranate seeds.
Mix salad and enjoy!
Depending on the mustard you have chosen, the salad can have very different notes. So try it out and find your favorite!
